Waffle-Cut Potato Fries

Ingredients

• 4 large potatoes
• 2 tbsp cornstarch
• ½ tsp paprika
• ½ tsp garlic powder
• ½ tsp black pepper
• 1 tsp salt
• Vegetable oil, for frying

Method


1. Peel the potatoes if desired and wash them thoroughly.


2. Using a waffle-cut crinkle slicer, make the first cut along one side of the potato.


3. Turn the potato 90° and make another cut. Continue alternating the direction after each slice to create the classic cross-hatched waffle pattern.


4. Place the sliced potatoes in cold water and soak for 20–30 minutes to remove excess starch.


5. Drain and dry the potatoes very thoroughly with a clean kitchen towel or paper towels.


6. Toss the potatoes with cornstarch, paprika, garlic powder, black pepper, and salt.


7. Heat vegetable oil to 170°C (340°F).


8. Fry the potatoes in small batches for 3–4 minutes until lightly golden. Remove and drain.


9. Increase the oil temperature to 180°C (350°F) and fry them again for 2–3 minutes, until deeply golden and crispy.


10. Drain on paper towels and season with a little extra salt while hot.


11. Serve immediately with ketchup, mayonnaise, cheese sauce, or your favourite dip.
