Christmas In Colombia

Christmas in Colombia begins on December 7th with the celebration of DΓ­a de las Velitas (Day of the Candles) where people place hundreds of candles at the doors of their homes and in their neighborhood to guide the way of the Virgin Mary.

Friends and families gather together to sing Christmas carols and enjoy Christmas treats.

Although Colombian buΓ±uelos are enjoyed all year round, these little balls are an iconic food for the holidays.

You can find buΓ±uelos all around South America. Sweet or savory. Made with white flour, corn flour, cassava flour, or mashed cassava.

β€’ Vegetable oil for frying
β€’ ΒΎ cup cornstarch
β€’ ΒΌ cup yucca flour or tapioca starch
β€’ 1 cup finely grated feta cheese
β€’ Β½ cup finely grated Queso fresco or fresh farmer cheese
β€’ 2 eggs
β€’ ΒΌ teaspoon baking powder
β€’ 2 tablespoons sugar
β€’ Pinch salt
β€’ 1 tablespoon milk

1. Place all the ingredients, except the oil in a medium bowl and mix well using your hands until soft dough is obtained.
2. Form small balls using your hands.
3. In a deep pot, heat the vegetable oil to 300Β°F (Warm, not very hot). Carefully drop the balls in the warm oil. Cover the pot and after about 3 to 4 minutes, turn the heat up and fry until golden brown.
4. Remove from the oil and drain on a plate lined with paper towels. Serve.
