Airy chocolate mousse

With this recipe, your chocolate mousse will be really airy. Try it yourself!

INGREDIENTS (For 6 servings)

200 g dark chocolate
1 pinch of salt
2 eggs
2 tablespoons sugar
400 g whipped cream

PREPARATION

Step 1
​​​​​​Chop the dark chocolate and melt it in a water bath. Allow to cool slightly. Meanwhile, separate the eggs. Beat the egg yolks with salt and 1 tablespoon sugar until creamy (about 3-4 minutes).

Step 2
Beat the cream until stiff and chill. Beat the egg whites with 1 tablespoon sugar until very stiff. Add the melted chocolate to the egg yolks and stir well so that no pieces form.

Step 3
Fold the egg whites into the chocolate mixture. Make sure that not too much air escapes. Finally, carefully fold in the cream. Pour everything into a large or several small serving bowls and refrigerate for at least 5 hours or overnight so that the mousse sets.
