Cookie cupcakes
Cookie cupcakes are so awesome! The fluffy muffin dough is filled with homemade cookie dough and then garnished with cream cheese frosting.
INGREDIENTS (For 12 cupcakes)
FOR THE COOKIE DOUGH
50 g soft butter
25 g brown sugar
25 g sugar
1 tsp vanilla sugar
½ egg (size M)
60 g wheat flour (type 405)
¼ tsp baking soda
1 pinch of salt
50 g chocolate drops
FOR THE DOUGH
4 eggs (size M)
150 ml neutral oil (e.g. sunflower oil)
60 g natural yoghurt
180 g wheat flour (type 405)
120 g sugar
1 pack vanilla sugar
1 pack baking powder
FOR THE FROSTING
250 g soft butter
500 g powdered sugar
250 g double cream cheese
11 cookies
PREPARATION
Step 1
Preheat the oven to 180 degrees top and bottom heat Preheat (fan oven 160 degrees). Line a muffin tray with 12 paper cases. For the cookie dough, mix soft butter, brown sugar, sugar and vanilla sugar until creamy. First mix in the egg, then flour, baking soda and salt. Finely chop the chocolate chips and add. Form 12 equal-sized balls from the dough and place in the fridge until further processing.
2nd step
For the dough, mix the eggs, oil and natural yoghurt until creamy. Mix the flour, sugar, vanilla sugar and baking powder in a separate bowl and mix into the egg-yoghurt mixture. Divide the dough evenly between the 12 muffin cases and place a cookie dough ball in the middle of each muffin. Bake the muffins in the preheated oven for about 15 minutes until golden brown. Then let them cool on a cake rack.
