1/2 kg of fresh anchovies
1 / 4 of l of white vinegar
5 sprigs of parsley, chopped 1 mustard glass of virgin olive oil 1 tsp.

PREPARATION:

1. Remove the heads of the anchovies and their guts using an incision made with a knife on the belly of the fish. Open them in 2 into fillets.
