Anchovies are small white fish that are often found in fried or marinated. It is thus possible to enjoy it as an aperitif or as a dish with potatoes for example. We present to you this recipe for fresh anchovies marinated in vinegar which will be ideal for all your culinary preparations.



1/2 kg of fresh anchovies
1 / 4 of l of white vinegar
5 sprigs of parsley, chopped 1 mustard glass of virgin olive oil 1 tsp.
heaped coffee of Guérande salt
5 turns of a black pepper mill 1 clove of chopped garlic

1. Remove the heads of the anchovies and their guts using an incision made with a knife on the belly of the fish. Open them in 2 into fillets.
