Italian  Chicken Breasts


8 slices of mozzarella
4 x 125g boneless, skinless chicken breasts
4 fresh sage leaves
8 slices of Parma ham (or serrano ham)
Olive oil to grease
Black pepper to taste
Cherry tomatoes to accompany


Preheat the oven to 200ºC.

Lightly grease a baking sheet with olive oil. 

Place 2 slices of mozzarella on each chicken breast and add a sage leaf on top.

Wrap each breast with 2 slices of Parma ham, covering the mozzarella. 
Season with pepper to taste. 

Place the breasts on the baking sheet and cook in the oven for 20 minutes or until the chicken is cooked through, the cheese has melted and the ham is golden brown. 

Serve with grilled or roasted cherry tomatoes.
