150 g long rice
150 g tofu
3 tomatoes
30 g green olives a few basil leaves
3 tbsp. olive oil
1 tbsp. tablespoons of balsamic vinegar, salt, pepper

1. Wash the rice in cold water to remove the starch. In a saucepan, pour 3 volumes of water for 1 volume of rice. Cook it as directed on the package. Drain it and let cool.

2. Wash and cut the tomatoes into quarters. Cut the tofu into small cubes. In a bowl, combine all the salad ingredients.

3. Prepare a vinaigrette with the oil, vinegar, salt and pepper. Pour it over the salad and mix well. Keep cool. Wash and chop the basil. When ready to serve, decorate with green olives and chopped basil.
