Chocolate-Dipped Orange Cookies

Ingredients

• 2 1/2 cups (315g) all-purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1 cup (225g) unsalted butter, softened
• 3/4 cup (150g) granulated sugar
• 1 large egg
• 1 tablespoon orange zest
• 2 tablespoons fresh orange juice
• 1 tablespoon vanilla extract
• 2 tablespoons cornstarch

For the chocolate layer
• 200g dark or milk chocolate, chopped
• 1 tablespoon vegetable or coconut oil (optional, for a smooth finish)

Method

1. Preheat oven to 340°F (170°C) and prepare a baking sheet with the original parchment paper.

1. In a bowl, sift together the flour, baking powder, cornstarch, and salt.

1. In another bowl, cream together the butter and sugar until light and fluffy.

1. Whisk together the egg, orange zest, orange juice, and vanilla extract until well blended.

1. Gradually add the dry ingredients and mix until a smooth batter forms.

1. Spread the batter onto a baking sheet, leaving some space between each cookie.

1. Bake for 10 to 12 minutes, until the edges are lightly golden.

1. Let the cookies cool completely on the baking sheet, leaving some space between each cookie.
