Fruit Loaf Cake
Ingredients
• 2 cups (250g) all-purpose flour
• 1 cup (200g) brown sugar
• 1 cup (250g) mixed dried fruits (raisins, cherries, sultanas, candied peel, etc.)
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp mixed spice or cinnamon powder
• ½ cup (120ml) vegetable oil or melted butter
• 3 large eggs
• ½ cup (120ml) milk or orange juice
• 1 tsp vanilla extract
• 1 tbsp honey or molasses (optional for richness)
• A pinch of salt
Instructions
Preheat your oven to 170°C (340°F). Grease and line a loaf pan with parchment paper.
In a bowl, mix the flour, baking powder, baking soda, salt, and mixed spice. Set aside.
In another large bowl, whisk together oil, brown sugar, and eggs until smooth. Add milk (or orange juice), vanilla extract, and honey or molasses if using.
Add the dry ingredients to the wet mixture and stir gently until just combined. Fold in the mixed dried fruits until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55–65 minutes or until a skewer inserted into the center comes out clean.
Allow the cake to cool completely before slicing.
