Homemade Scones
Ingredients
• 2 cups (250g) all-purpose flour
• 1 tbsp baking powder
• ¼ tsp salt
• ¼ cup (50g) granulated sugar
• ½ cup (115g) cold unsalted butter, cubed
• ¾ cup (180ml) milk
• 1 large egg
• 1 tsp vanilla extract
Method
1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. Rub the cold butter into the flour mixture until it resembles coarse breadcrumbs.
4. In a separate bowl, whisk together the milk, egg, and vanilla extract.
5. Add the wet ingredients to the dry ingredients and mix gently until a soft dough forms. Do not overmix.
6. Fold in any optional add-ins if using.
7. Turn the dough onto a lightly floured surface and gently pat it to about 1 inch (2.5 cm) thick.
8. Cut into rounds or triangles using a cutter or knife.
9. Place the scones on the prepared baking tray and brush the tops with a little milk or beaten egg.
10. Bake for 12–15 minutes, or until golden brown.
11. Allow to cool slightly before serving.
