Nutella-Filled Pancakes
Ingredients
For the Pancake Batter
• 2 cups (250g) all-purpose flour
• 2 tsp baking powder
• ¼ tsp salt
• 2 tbsp granulated sugar
• 2 large eggs
• 1½ cups (360ml) whole milk
• 2 tbsp unsalted butter, melted
• 1 tsp vanilla extract
For the Filling
• ½ cup (150g) Nutella
For Cooking
• 1 tbsp butter or vegetable oil
Method
1. Spoon 1 tablespoon portions of Nutella onto a parchment-lined plate or tray and freeze for 30–45 minutes until firm.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
4. Gradually add the wet ingredients to the dry ingredients and whisk until smooth. Let the batter rest for 10 minutes.
5. Heat a lightly greased non-stick frying pan over medium-low heat.
6. Pour about ¼ cup of batter into the pan.
7. Place one frozen Nutella disc in the centre of the batter, then immediately cover it with another 2 tablespoons of batter.
8. Cook for 2–3 minutes, until bubbles appear on the surface and the underside is golden brown.
9. Carefully flip the pancake and cook for another 2–3 minutes, until fully cooked and golden.
10. Repeat with the remaining batter and Nutella.
11. Dust with icing sugar or serve with fresh fruit, chocolate sauce, or whipped cream.
