Orange Loaf Cake

Moist Orange Loaf Cake

Ingredients

• 2 cups (250g) all-purpose flour
• 1½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• ¾ cup (150g) granulated sugar
• ½ cup (115g) unsalted butter, softened
• 3 large eggs
• ½ cup (120ml) fresh orange juice
• 1 tbsp finely grated orange zest
• ½ cup (120ml) milk
• 1 tsp vanilla extract

Method


1. Preheat the oven to 175°C (350°F). Grease and line a 9 × 5-inch loaf pan.


2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.


3. Cream the butter and sugar for 3–4 minutes, until light and fluffy.


4. Add the eggs one at a time, beating well after each addition.


5. Mix in the orange zest and vanilla.


6. Combine the orange juice and milk.


7. Add the dry ingredients to the butter mixture in three additions, alternating with the orange juice mixture. Mix gently until just combined.


8. Pour the batter into the prepared loaf pan and smooth the top.


9. Bake for 45–55 minutes, or until a skewer inserted into the centre comes out clean or with a few moist crumbs.


10. Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack.


11. For the glaze, mix the icing sugar with orange juice until smooth and drizzle over the completely cooled loaf.


12. Slice and serve.
