Creamy coleslaw dressing

This is the creamy coleslaw dressing my grandma kept in her fridge all summer, and somehow it has no dairy at all. Everything’s blended into a tangy, creamy dressing that’s perfect for cabbage, coleslaw, or honestly anything that needs some summer flavor!

INGREDIENTS

• 1 tsp kosher salt
• 1 small onion roughly chopped (about 1/4 cup)
• 1 tsp celery seed
• 1 tsp ground mustard (not Colman’s)
• 3 tbsp honey
• 1/4 cup vinegar
• 3/4 cup neutral oil

INSTRUCTIONS

1. In the container of a blender or a large bowl (if using a handheld immersion blender), place the vinegar, honey, neutral oil, celery seed, ground mustard, salt, and chopped onion.
2. Process until fully emulsified and the onion is completely incorporated. Use immediately or store in the fridge for up to 2 weeks.
