Vanilla Bundt Cake with Chocolate Chips

Ingredients

• 3 cups (375g) all-purpose flour
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 cup (225g) unsalted butter, softened
• 1½ cups (300g) granulated sugar
• 4 large eggs
• 2 tsp vanilla extract
• 1 cup (240ml) buttermilk
• 1½ cups (270g) chocolate chips
• 1 tbsp flour, for coating the chocolate chips

Method


1. Preheat the oven to 175°C (350°F). Grease and flour a 10-inch Bundt pan thoroughly, making sure to coat all the grooves.


2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.


3. Toss the chocolate chips with 1 tablespoon of flour and set aside.


4. In a large bowl, cream the butter and sugar for 3–5 minutes until light and fluffy.


5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.


6. Add the dry ingredients in three additions, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until combined.


7. Gently fold in the chocolate chips.


8. Pour the batter evenly into the prepared Bundt pan and smooth the top.


9. Bake for 50–60 minutes, or until a skewer inserted into the thickest part comes out clean or with a few moist crumbs.


10. Let the cake cool in the pan for 10–15 minutes, then carefully invert it onto a wire rack.


11. Allow it to cool completely before slicing.
