Tiramisu Cheesecake

Ingredients

Cake Layer:

• 1/2 cup + 2 tbsp flour
• 1/2 tsp baking powder
• Pinch of salt
• 3 tbsp unsalted butter, at room temperature
• 1/4 cup + 2 tbsp sugar
• 1 tbsp vegetable oil
• 3/4 tsp vanilla extract
• 1 large egg
• 1/4 cup milk

Espresso Mix:

• 3/4 cup hot water
• 2 1/2 tbsp instant espresso powder
• 4 tbsp sugar
• 6 tbsp Kahlua

Cheesecake Filling:

• 8 oz cream cheese, at room temperature
• 16 oz mascarpone cheese
• 1 cup sugar
• 3 tbsp flour
•  3/4 cup sour cream
• 1/2 tsp vanilla extract
• 2 large eggs + 3 yolks, at room temperature
• 12 Ladyfingers

Tiramisu Topping:

• 3 large egg yolks, at room temperature
• 5 tbsp sugar
• 7 tbsp heavy whipping cream, cold
• 3 oz mascarpone cheese
• Cocoa powder for dusting

Preparation

1️⃣ Cake Layer: Preheat your oven to 350°F (175°C). Mix the dry ingredients, beat the butter with the sugar until creamy, add the egg, milk and mix well. Bake in prepared pan for 20-25 minutes. This is the fluffy base of your tiramisu cheesecake!

2️⃣ Espresso Mix: Dissolve the espresso in the hot water, add the sugar and Kahlua. This elixir will give your ladyfingers that authentic tiramisu flavor.

3️⃣ Cheesecake Filling: Beat the cream cheese and mascarpone until smooth, add the sugar, flour, sour cream, vanilla, and eggs. On the cake layer, place the ladyfingers soaked in the espresso mixture, then pour the cheesecake filling on top. This is the creamy heart of the cake!

4️⃣ Bake and Cool: Bake the cheesecake for 60-70 minutes. Then let it cool completely in the refrigerator, giving it time to develop all those amazing flavors.

5️⃣ Tiramisu Topping: Beat the egg yolks with sugar until thick, add the mascarpone and gently mix with the whipped cream. Spread this delight over the cold cake and finish with a sprinkle of cocoa powder.
