Chicken strips with vegetables

Incredibly good: Chicken strips with vegetables are the perfect meal for a weeknight. With peppers, broccoli and peas, the dish tastes super delicious and is quick to cook. Rice or pasta is a good side dish.

INGREDIENTS

300 g chicken breast
1 onion
1 clove of garlic
¼ broccoli
¼ cauliflower
½ zucchini
1 red pepper
100 g peas (frozen)
1 carrot
a little salt and pepper
20 g flour
4 tbsp sunflower oil
100 ml white wine
250 g cream
1 tbsp coarse mustard (1-2 tbsp)
1 pinch of paprika powder

PREPARATION

1. For the strips, cut the chicken breast into slices about 0.5 cm thick. Peel the onion and garlic and chop finely.  Wash the broccoli and cauliflower and cut off the stalks. Cut into small florets. Wash and dice the zucchini. Wash the peppers, quarter them, remove the core and roughly dice them.

2. Defrost the peas in a bowl of cold water. Wash, clean and peel the carrots and cut them into diagonal slices. Season the chicken with salt and pepper and dust with flour.

3. Heat a pan with the oil and fry the chicken over a high heat for 2-3 minutes, stirring constantly. Remove the chicken and set aside.

4. Add a little more oil to the pan and add all the vegetables, i.e. broccoli, cauliflower, zucchini, peppers, peas and carrots, to the pan and fry for about 3 minutes, stirring constantly. Remove the vegetables and set aside.

5. Put the chopped onion and garlic in the pan and sauté for about 2 minutes until golden brown. Deglaze with the white wine and allow it to reduce. Pour in the cream, add the mustard, salt, pepper and paprika powder, add the vegetables and chicken and reduce the cream until the sauce has a creamy consistency. Enjoy your meal!
