Breakfast pizza

Breakfast pizza provides colorful variety in the morning. Our recipe with oatmeal and yogurt tastes delicious and is filling. There are no limits to your imagination when it comes to toppings.

INGREDIENTS (For a 26 cm springform pan)


FOR THE DOUGH


200 g dried dates
250 g fine oat flakes
1 soft banana
2 tbsp coconut oil
1 tsp maple syrup
½ tsp cinnamon

FOR THE TOPPING


250 g natural yoghurt
2 tsp honey
125 g blueberries
125 g raspberries
1 banana

ALSO


Some coconut oil for the pan
Some fresh mint to garnish

PREPARATION


Step 1
For the dough, put the dates in a bowl, pour hot water over them and leave to soak for about 30 minutes. Grease a springform pan (Ø 26 cm) with coconut oil. Drain the date water and finely puree the dates in a food processor.

2nd step
Preheat the oven to 190 degrees top/bottom heat (fan oven: 170 degrees). Mix the date puree with the oat flakes. Mash the banana with a fork and add it. Add coconut oil, maple syrup and cinnamon and mix everything into an even mass.

3rd step
Spread the dough on the springform pan base and press down lightly. Bake in the preheated oven for about 15 minutes, then let cool on a wire rack.

4th step
For the topping, mix natural yoghurt with honey until smooth. Wash the berries and pat dry. Cut the banana into slices. Wash the mint and shake dry.

5th step
Spread the yoghurt on the pizza base, leaving a 1 cm border. Then cover with the prepared toppings, garnish with the fresh mint and serve immediately. The breakfast pizza with oatmeal makes about 12 pieces and will keep in the fridge for at least 1 day.
