So crispy: Our simple recipe for tarte flambée with spicy goat’s cheese and tender figs is quick to prepare and vegetarian. Simply delicious!
INGREDIENTS
FOR THE DOUGH
200 g wheat flour (type 405 / 550)
125 g lukewarm water
2 tbsp oil
½ tsp salt
FOR THE TOPPING
200 goat’s cheese rolls (or goat’s cream cheese)
4 figs
some rosemary
250 g crème fraîche
salt and pepper
ALSO
some flour for rolling out
PREPARATION
1. Put all the ingredients for the dough in a bowl and knead into a soft dough for 10 minutes, either by hand or with the dough hook of a food processor. Form into a ball and cover and leave to rest at room temperature for 30 minutes.
2. In the meantime, for the topping, cut the goat cheese roll into slices. Wash the figs, remove the stem and also cut into slices. Pluck the rosemary leaves.
3. Preheat the oven to 230 degrees (top/bottom heat). Line a baking tray with baking paper. Divide the dough into two equal portions. Roll out thinly and rectangularly on a lightly floured work surface. Place the dough on the baking tray.
4. Spread the two tarte flambées with crème fraîche. Season with salt and pepper and cover evenly with goat cheese, figs and rosemary. Bake in the preheated oven for 13-15 minutes until crispy and golden brown. Remove from the oven and serve. Repeat with the remaining dough. Enjoy!
