HOMEMADE MAYONNAISE πŸ˜‹

Ingredients:

1 free-range egg at room temperature
1 tablespoon lemon juice or white wine vinegar
1 pinch of salt (to taste)
250 ml of very mild olive or sunflower oil
1 or 2 tablespoons of water (optional)

Preparation:

1- Put the egg, lemon juice and salt in the container

2- Pour the oil and let it rest for 10 minutes

3- Beat with the mixer very straight and positioned at the bottom, for 1 or 2 minutes to emulsify the lower part

4- Continue until you notice that the blades rotate without load

5- Very little by little, raise and lower the mixer to incorporate the oil on the surface

6- Taste and correct the salt with a pinch dissolved in water and correct the texture with one or two tablespoons of water
