RICOTTA CAKE
Ricotta cake is a genuine and simple dessert, excellent for breakfast or for a snack for the whole family. A cake that will conquer you with every bite thanks to its soft and fluffy consistency that gives it to the ricotta.
INGREDIENTS:
▪︎3 eggs
▪︎250g ricotta
▪︎200g 00 flour
▪︎50g potato starch
▪︎160g sugar
▪︎65ml oil
▪︎40ml milk
▪︎1 sachet of baking powder
▪︎1 lemon zest
▪︎powdered sugar to taste
METHOD:
1- in a bowl, break the eggs and start whipping them with an electric whisk, adding the sugar and grated lemon zest. Mix until the mixture is light and frothy
2- add the well-drained ricotta, the milk and the seed oil and mix again.
3- with the electric whisk in action, gradually incorporate the sifted starch and flour and finish with the sachet of baking powder.
4- pour the mixture into a greased and floured 24 cm cake tin and bake in a preheated oven at 180° for 40′, always checking with a toothpick before taking it out of the oven.
5- once cooked, let it cool, remove it from the tin and serve on a serving plate with a sprinkling of icing sugar
