Vanilla parfait

Our creamy and soft vanilla parfait is the perfect dessert for warm summer evenings! This semi-frozen vanilla ice cream is simply irresistible!

INGREDIENTS

FOR THE PARFAIT

400 g cream
½ vanilla pod
3 egg yolks (size M)
1 egg (size M)
100 g powdered sugar

ALSO

200 g mixed berries
1 tbsp chopped pistachios

PREPARATION

1. Line a silicone loaf pan with cling film. For the parfait, put the whipped cream in a mixing bowl and beat until half stiff. Halve the vanilla pod lengthways and scrape out the pod.

2. Put the egg yolks, egg, sifted powdered sugar and scraped out the vanilla pod in a metal bowl and mix lightly with a whisk.  Place the bowl on a hot water bath and continue stirring until it reaches 80 degrees. Do not let the water in the water bath boil.

3. Immediately place the metal bowl with the egg mixture on a bowl of ice water*. Beat the egg mixture until cold. Fold in the whipped cream. Pour the vanilla parfait mixture into the prepared loaf pan.

4. Freeze the parfait for at least 10 hours. Then remove from the pan using the foil and cut into slices. Decorate with fresh berries and chopped pistachios. Enjoy!
