in cake:

ย 

-1/4 cup almond flour
-1 tbsp coconut flour
-1/2 scoop protein powder (i used speculoos)
-1 tbsp coconut sugar
-1/4 tsp baking soda
-1/2 tsp baking powder
-cinnamon
-salt
-1 egg
-1/2 mashed banana
-1 small to medium grated carrot (abt 1/4 cup, squeezed to get most moisture out)
-1 tbsp yog
-splashes of almond milk (until cake batter-like consistency)
-desiccated coconut, walnuts, choco chips, etc

mix wet then add dry n fold in add-ins. bake 180 deg cel for 25-30 minutes or when toothpick comes out clean.

let cool n then slice into 3 layers.

in frosting:

-1/4 cup yog
-1 tbsp cream cheese
-3 to 4 drops of white choco flavdrops

layer n frost cake. then decorate.

ate a whole stick of carrot in this pls be proud of me eheh okay but to be fair u CANNOT taste any traces of disgustingly sweet carrot essence here so itโ€™s all gud

a tip is to pat your carrots dryy since it actually has so much more moisture than what u think. thus u really dont need too much liquid๐Ÿ‘€ and this โ€œfrostingโ€ was just the perfect balance to this cake!! lightly sweet and tart YUMS

no it does NOT look pretty i am SORRYthe layers were very non-distinctive but whatever itโ€™s the taste that counts.
