Chicken with Jalapeños and Peaches
Ingredients:
4 skinned chicken breasts
2 ripe peaches, cut into wedges
2 jalapeños, seeded and thinly sliced
1 red onion, thinly sliced
3 cloves garlic, minced
1/4 cup balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
1 teaspoon fresh thyme
Salt and pepper to taste
Chopped fresh cilantro for garnish
Directions:
Preheat oven to 400°F.
Season chicken breasts with salt and pepper.
In a large skillet, heat oil over medium-high heat and brown chicken on both sides. Remove and set aside.
In the same skillet, sauté onion and garlic for 2-3 minutes.
Add peaches and jalapeños, cooking for another 2 minutes.
Stir in balsamic vinegar, honey, and thyme. Cook for 1 minute more.
Place chicken in a baking dish and top with peach-jalapeño mixture.
Bake for 15-20 minutes or until chicken is cooked through.
Serve hot, garnished with chopped fresh cilantro.
