Biscuits

Biscuits are often served with savory dishes in America, such as stews or fried chicken. But they also taste great spread with butter and jam – give it a try!

INGREDIENTS (For 12 pieces)

For the dough

500 g wheat flour (type 405)
1 tbsp sugar
1 tbsp baking powder
1¼ tsp salt
½ tsp baking soda
280 g cold butter
310 ml cold buttermilk

PREPARATION

Step 1
Line a baking tray with baking paper. For the dough, mix the flour, sugar, baking powder, salt and baking soda in a large bowl. Cut 250 g cold butter into 1 cm cubes and add to the dry ingredients.  Separate the cubes as needed if they stick together and mix briefly with the dry ingredients so that they are covered in flour.

Step 2
Use your hands to rub the butter cubes into the flour mixture until only pea-sized pieces are visible. Work quickly so that the butter does not get too warm. Otherwise, you can put the entire bowl back in the fridge.

Step 3
Slowly add the cold buttermilk, mixing with a fork until the water has been absorbed. Then mix with your hands just until you have a very coarse, lumpy and relatively dry dough. There may be some flour and butter residue left at the bottom of the bowl.

Step 4
Take the dough out of the bowl (leave the flour and butter residue) and shape it into a rough square (20 cm x 20 cm) on a lightly floured work surface using your hands and a dough scraper.
