Fluffy lemon cake

Fluffy lemon cake is a delightful confection that combines the lightness of a fluffy cake with the tangy brightness of lemon. With its moist crumb and zesty flavor, it’s a perfect treat for any occasion, whether it’s a sunny afternoon tea or a celebratory dessert.


For the cake:
Sugar 200 gr.
Natural yogurt 200 gr.
Wheat flour 240 gr.
Eggs 3 u.
Baking powder 2 tsp.
Salt 1 pinch
Oil (sunflower or neutral coconut) 50 ml.
Zest of 1 lemon (medium)

For the bathroom:

200 grs.  of butter
200 grs.  cream cheese
3 cups of powdered sugar
zest juice of 1 lemon
2 teaspoons vanilla


Preheat the oven to 180 degrees (moderate).  In a bowl, beat the yogurt, eggs and sugar until combined.

Add the flour, baking powder, salt and lemon zest.  Mix well.  Finally, add the oil and integrate all the ingredients.

Pour the dough into a 22 cm mold, previously buttered and floured.  Put in the oven for about 40 minutes.  Remove and let cool.

For the topping, melt the butter and let it cool, add the cream cheese and the other ingredients to form the frosting. 

Unmold the cake when it is cold and cover with the topping, decorate with lemon zest and ready to eat.
