Baden Schäufele

You can now easily make Baden Schäufele at home!  In no time at all you will be able to make the specialty just like in a restaurant!


1 kg of scoops
2 tbsp white wine vinegar
100 ml white wine
1 medium onion
2 bay leaves
8 black peppercorns
1 clove
1 pinch of salt


1. Cover the Schäufele with water in a pot.  Add the white wine vinegar and white wine. 

Peel the onion, dice it roughly and add it to the pot.  Add the bay leaves, peppercorns, clove and salt to the Schäufele and bring the water gently to the boil.

2. Now let the Schäufele simmer gently for about 60-80 minutes. 

Before serving, remove, drain well and cut into thin slices.  The broth can be used to make potato salad.
