Fluffy brioche

Indulge in the exquisite pleasure of fluffy brioche, a decadent bread with a delicate crumb and buttery richness. The dough, enriched with eggs and butter, undergoes a meticulous process of proofing, resulting in a pillowy texture that practically melts in your mouth.

INGREDIENTS

380 g (3 cups) all-purpose flour;
20 g (3 tablespoons) cornstarch;
40 g (3 tablespoons) butter;
50 g (⅝ cup) sugar;
1 egg;
7 g (1 teaspoon) salt;
7 g (1 ½ tsp) dry yeast;
150 ml (⅔ cup) warm milk;
40 ml (3 tablespoons) vegetable oil;
Melted butter

Directions:

Whisk the flour with the cornstarch, salt and yeast.
Add the melted butter. milk, oil, egg and sugar into flour mixture. Knead until you obtain a smooth dough.
Reserve the dough for 1 hour.

Cut the dough into pieces and roll them into balls. Flatten each ball into a disk and cover half with melted butter and sesame seeds.

Spread the dough discs overlapping them and leave for 1 hour to rise.
Brush with egg yolk and bake at 180°C/350°F for 25 minutes
