Crispy & healthy lentil meatballs: With our recipe you can conjure up a delicious dish for the whole family using red lentils, eggs and spices. Simply delicious!
INGREDIENTS
1½ g butter
250 g red lentils
500 ml vegetable stock
1 onion
1 – 2 cloves of garlic
½ bunch of flat-leaf parsley
2 eggs
2 tbsp olive oil
1 tsp cumin
1 tsp paprika powder
1 tsp salt
1 large pinch of black pepper
1 tbsp cornstarch
2 tbsp spelt or wholemeal breadcrumbs / breadcrumbs
6 tbsp sunflower oil
PREPARATION
1. Melt the butter in a pan and fry the lentils in it for about 1-2 minutes. Pour in the vegetable stock and let the lentils simmer gently for about 20 minutes (please also follow the instructions on the packet).
2. Remove the soft-boiled lentils from the stove and allow to cool slightly. Meanwhile, peel the onion and garlic cloves and dice finely. Wash the parsley, pat dry, pick off the leaves and chop finely.
3. Put the lentils in a bowl. Add the eggs, onion, garlic cloves and parsley and mix well. Also stir in the olive oil, spices, cornstarch and breadcrumbs. Now leave to stand for about 15 minutes.
4. Then use wet hands to form 10-12 meatballs with a diameter of about 7 cm. Heat oil in a coated pan. Fry the vegetarian lentil patties slowly for about 2-3 minutes on each side until they are nice and crispy. Remove from the pan and serve. Enjoy your meal!
