Spaghetti salad with pesto
Our quick spaghetti salad with pesto, cherry tomatoes and pine nuts tastes surprisingly light and fresh – just the thing for summer!
INGREDIENTS
400 g spaghetti
200 g green pesto
250 g cherry tomatoes
50 g pine nuts
Salt and pepper
1 bunch of basil
200 g mini mozzarella balls (optional)
PREPARATION
1. Cook the spaghetti in boiling salted water until al dente according to the instructions on the packet. Drain, let drain and place in a large bowl. Mix the spaghetti with the pesto while it is still warm and let it cool.
2. In the meantime, wash and halve the cherry tomatoes. Roast the pine nuts in a pan without oil over medium heat until they smell fragrant. Remove from the pan and let cool.
3. Mix the halved cherry tomatoes and roasted pine nuts into the lukewarm spaghetti salad.
4. Wash the basil, pluck the leaves from the stems and add to the salad. Mix everything together. If using, add mini mozzarella.
5. Season the spaghetti salad again with salt and pepper and serve. Enjoy!
