Sweet potato peanut curry

The sweet potato peanut curry is absolutely delicious, inexpensive and even vegan. If you like spicy food, you will love this wonderful curry!

INGREDIENTS

FOR THE SWEET POTATO PEANUT CURRY

1 tbsp coconut oil
1 onion
2 cloves of garlic
1 piece of ginger (thumb-sized piece)
500 g sweet potatoes
3 tbsp red, vegan Thai curry paste
1 tbsp creamy peanut butter
400 ml coconut milk (from a can)
1 lime
200 g spinach
Salt and pepper

ALSO

cooked rice to serve
1 handful of roasted peanuts to serve

PREPARATION

1. Melt the coconut oil in a saucepan over medium heat.  Peel and dice the onion and sauté in the oil for 5 minutes. Peel and press the garlic. Scrape the skin off the ginger with a spoon and finely grate the ginger. Add the garlic and ginger to the onions and cook for 1 minute until fragrant.

2. Peel and dice the sweet potatoes. Add the Thai red curry paste, creamy peanut butter and the sweet potatoes to the pan and stir in. Add the coconut milk and water. Bring everything to the boil, reduce the heat and simmer covered for 25-30 minutes until the sweet potato is soft.

3. Squeeze the lime and stir in the juice with the spinach. Season the curry with salt and pepper. Serve with cooked rice. Sprinkle roasted peanuts on top for a crunchy topping. Enjoy!
