VEGAN COCONUT CAKE

INGREDIENTS

 

255g flour
45g steviala coconut flour
2tsp baking powder
150g sugar OR 75g steviala kristal sweet
125ml oil
270ml non-dairy milk


ICING


150g coconut yogurt
Icing sugar OR  vanilla protein powder
until thickened
pink food colouring Shredded coconut

INSTRUCTIONS

1. Preheat oven to 180°C

2. Sift flours and baking powder into a bowl.
Add sweetener and mix.

 

3. In a separate bowl mix together oil and milk.

4. Pour wet into the dry and mix until just combined. Bake for 35-45 minutes, or until a toothpick comes out clean.

Allow to cool before you top it with the icing. Enjoy!
