Senegalese donuts

These little donuts come straight from Senegal. These are small bites of coconut, cooked in a hot oil bath. This family recipe will delight all sweet tooth and will bring exotic notes to your plates. Children can help you make the dough for donuts which is very easy. All you have to do is go to the kitchen to test these Senegalese donuts and make your guests’ taste buds travel on Shrove Tuesday!

INGREDIENTS: 10 PERS.


450 g flour
200 g of grated coconut
150 g sugar
1/2 teaspoon baking powder
1 sachet of vanilla sugar
10 cl of milk
2 eggs
20 g butter
1 pinch of salt
1 C. tablespoons of water orange blossom
oil for frying

Pour half of the flour and the grated coconut into a large bowl. Dig a well. Pour in the yeast, a pinch of salt, the sugar, and the vanilla sugar. Add the previously beaten eggs, melted butter, milk, and orange blossom water. Knead the dough for a few minutes. The dough should be sticky. Gradually add the rest of the flour until you obtain a soft and homogeneous dough. Cover the bowl and let stand for 30 minutes at room temperature.

Heat some oil in your deep fryer or in a large saucepan. Take a small portion of the dough and roll it into a ball. Dip the donut in the hot oil. Repeat the operation. Cook the donuts for a few minutes so that they are golden brown. Drain and place the donuts on paper towels. Enjoy lukewarmly.
