Citrus Avocado Salad

This is the Bright and Beautiful Salad creation we’re all going to *require* to brighten up our winter.

Citrus is in season from December through February!

Sweet + Savory with just a teensy little kick from the jalapeno.

 

This Salad is quite versatile, so if there’s something here you don’t like, then leave it out.

Often simple things are the most beautiful and this Salad ABSOLUTELY reflects that!

Rachel’s tip:

Make SURE that you actually love the taste of the olive oil that you use for your salads such as this, because your salad will come out tasting very much like the oil you use. They each have their own unique flavor.

makes 6 servings

Ingredients:

2 large ripe avocados, peeled and sliced
1 large red grapefruit, sectioned
4 medium oranges, peeled and sliced
1/2 small red onion, finely chopped
1/2 cup pomegranate perils, from 1 pomegranate
1 jalapeno, seeded, and finely chopped
a handful of fresh cilantro leaves, chopped
1 tbsp extra virgin olive oil
1/2 tsp sea salt, or to taste
1/4 tsp coarsely ground pepper, or to taste
1/4 cup crumbled feta cheese, or goat cheese

 

Instructions:

Slice your avocados in half lengthwise.
Open up the halves and remove the pit. Scoop out the flesh and cut into slices.

Peel and segment your grapefruit and oranges.

In a large serving bowl, add avocados, grapefruit, oranges, onion, pomegranate seeds, jalapeño and cilantro as shown.

Drizzle with olive oil, and sprinkle with sea salt and pepper and gently toss to combine.

 

Top with crumbled feta cheese, then cover.

Refrigerate for an hour before serving to allow the flavors to blend.
