COFFEE FLAN

INGREDIENTS

– 4 egg yolks
– 275 ml Milk (whole)
– 70 g Sugar
– 1 Tablespoon of instant soluble coffee (one envelope)
– Liquid candy

PREPARATION

• The first thing we do is turn on our oven at 190º, at the bottom, so that it warms up. Since we are going to prepare it in a bain-marie, we put a dish that can withstand the heat in the lower part of the oven, with water so that it heats up. Next we put the 275 ml of milk in a saucepan and heat it (this operation can also be done in the microwave). Once hot, add the tablespoon of soluble coffee and dissolve it in the milk, letting it cool a little.

• Next we put in a bowl, the 4 egg yolks and the 70 g of sugar. With the help of some rods or a fork, we beat a little. Next we pour over the yolks, the milk with the coffee that will already be warm, mixing everything a little.

• Next we cover the bottom of our mold with liquid caramel, we can use a single mold as I have done, or several smaller ones, what we do have to take into account is that it is suitable for baking. Then we pour the mixture that we have prepared in the mold.

Next we put in the source with water that we have in the oven so that it is done in a bain-marie (It consists of cooking a food inside a saucepan, mold, etc. which in turn is inside a container with water so that the food is cooked by means of hot water and not by the heat of the oven directly), for approximately 40 minutes.

• In any case, we check if it is ready, inserting the tip of a knife or a toothpick and if it comes out clean when we remove it, our flan is ready. Take it out of the oven and let it cool, once cold we put it in the fridge so that it takes a little more consistency and we can unmold it without any problem.
