1.
Cut the beef into pieces of 100 g. Finely chop the bacon then cut the small salted lardons. Slice the onions.
2.
Heat the Cookeo in “browning” mode and brown the bacon and the salted fish cut into bacon. Reserve the contents of the pan and place the beef in it. Leave to color, then add the chopped onions and crushed garlic. Leave to cook for a few minutes, stirring regularly.
3.
Sprinkle with flour, wet with white wine, and add water to cover the meat. Add the bouquet garni and the carrots cut into slices then program the Cookeo in “fast cooking” or “pressure cooking” / immediate start mode and adjust the cooking time to 30 min. Close the lid and cook.
4.
Remove the bouquet garni, degrease the sauce, add the crushed tomatoes, the bacon and the pitted olives then let heat 10 min in “brown” mode. Season to your liking, add the chopped parsley just before serving, and enjoy!
5.
When cooking is finished, open the Cookeo and add the olives, chopped parsley, and flour, then mix with a wooden spoon or a whisk. Season to your liking, let the sauce thicken for a few minutes in “browning” mode then serve immediately.
