Egg rice

The delicious egg rice is the perfect dish for you: The fried rice with egg and vegetables is not only vegetarian, but also cheap and quick to make!

INGREDIENTS

FOR THE EGG RICE

2 eggs
1½ tbsp soy sauce
2 carrots
1 bunch spring onion
200 g cooked long grain rice (from the day before)
150g peas
100 g bean sprouts
1 pinch of sugar
1 pinch of salt
1 pinch of ground pepper

ASIDE FROM THAT

4 tbsp peanut oil

PREPARATION

1. Whisk the eggs and soy sauce well in a bowl. 

Peel the carrots and cut them into thin slices. 

Clean the spring onions and cut them into thin rings. 

Heat the oil in a pan or wok.  Add the eggs and let them set slightly, stirring constantly.

2. First add the rice and then the vegetables (carrots, spring onions, peas, bean sprouts). 

Add a few more drops of oil, sprinkle the sugar over it and fry the rice and vegetables over medium heat for 2 minutes, stirring constantly. 

Add the soy sauce as well as salt and pepper and stir well, fry again for about 2 minutes.
