Ingredients:
350 ml of whole milk at room temperature
20g honey
5.5 g dry baker’s yeast
250 g of flour
250 g wholemeal spelled flour
7g of salt
25g butter
Mild olive oil for greasing
Preparation:
- Mix the milk with the yeast and honey in a bowl. Add the flour and salt. Add the hot melted butter and knead by hand until incorporated. We let rest for 10 minutes.
- Lightly grease the table with a little oil, knead for 10 seconds and form a ball. Let rest for another 10 minutes. Knead for 10 seconds and let rest for 30 minutes.
- Grease and flour a rectangular mold about 30 cm long. We shape the dough, place it in the mold and let it ferment until it almost doubles its volume.
- We must take into account that the rest should be done in a warm and draft-free corner. The kitchen will have to be at a temperature above 20-22ΒΊC.
- Preheat the oven to 210ΒΊ with heat up and down.
- We brush the bread with milk and bake for 15 minutes.
- Lower the oven temperature to 180ΒΊ and cook for approximately 30 more minutes; It will depend on each oven.
- Remove from the mold to a wire rack and let it cool completely before serving.
