Loaded chipotle and hummus

Tomato: 1
Cherry tomatoes: 5
Scallions: 2
Garlic: 2 cloves
Parsley: Handful
Cumin seeds: 1 t
Cinnamon stick: 2 cm
Chipotle chilli paste: 1 T
Hummus: 3 heaped T
Xylitol/sugar: 2 t
Vegetables of choice: 3 C, I used cauliflower, broccoli, sugar snaps peas, peppers, mushrooms and green beans
Oil: 2 T
Salt to taste


1) Blend together tomatoes, scallions, garlic and parsley into a puree
2) Heat oil in a pan and add cumin seeds, cinnamon stick and the blended puree
3) Cook frequently stirring till the mixture begins to thicken
4) Mix in chipotle chilli paste and xylitol
5) Add vegetables of choice and water. Cook till vegetables are done
6) Stir in hummus and season as desired.
