Fluffy and tropical!
It’s loaf-shaped and not too sweet so defo qualifies as a breakfast food
Deets:
*60g ground almonds or almond flour
*60g plain flour
*50g coconut flour
*3/4 tsp baking powder
*1/2 tsp baking soda
*2.5 tsp ground ginger (feel free to omit)
*1/3-1/2 cup syrup
*4 eggs
*120ml (coconut) oil
*2 tbsp Passion fruit purée or more syrup sweetener
*3 tbsp plain coconut yog
Toppings:
passionfruit mango yog
Coconut flakes
Passionfruit pulp
Method:
Preheat oven to 180 and line loaf tin
Mix dry then add to wet
Bake for 35-40mins but check after 30
Once cooled, top with passion fruit yog, coconut flakes and passion fruit pulp
