Sponge deets:


*30g cacao powder
*175g plain flour
*275ml plant milk + 1 1/2 tsp apple cider vinegar
*2 vegan eggs e.g. flax or 6 tbsp aquafaba
*60-70g coconut sugar
*1/2 tsp baking soda
*3/4 tsp baking powder
*1/4 tsp xanthan gum
*1 1/2 tsp hot water + 1 tsp instant coffee

Cream filling:

*1/2 cup coconut cream
*2tbsp 30ml syrup (to taste)
*4 tbsp thick df yogurt 


melted chocolate + 1 tsp coconut oil


🍫preheat oven to 175 and line flat oven tray
🍫 mix milk & vinegar. Let curdle
🍫 sift dry then add wet
🍫spread mix onto tray. bake 10-11 mins
🍫while hot, roll up. let cool
🍫mix cream filling ingredients then refrigerate 30mins-1 hr to harden
🍫cut sponge into 8 rectangles, fill w cream and roll up. I wrapped in cling film to secure.
🍫refrigerate to harden.
🍫coat in melted choc and (u guessed it) refrigerate to harden
