Ingredients

1kg (2 pounds) of boiled potatoes
2 egg yolks
1/2 teaspoon nutmeg Salt and pepper to taste
100g (1 cup) grated Parmesan
3 tablespoons chopped parsley
2 eggs breadcrumbs to cover
1 block of mozzarella cheese

METHOD

Peel and mash cooked potatoes. Combine the mashed potatoes with salt, pepper, nutmeg, egg yolks, and Parmesan.

Cut the cheese into rectangles. Take a couple of tablespoons of the mashed potato and form it into a patty, wrap it around the cheese, making sure it is completely covered.

Beat 2 eggs and coat each potato fritter with egg and breadcrumbs.

Fry for 6-7 minutes or until evenly golden.
