Rum and raisin cake is a classic dessert infused with intense flavors.  The raisins are macerated in rum, providing sweetness and aroma, which are then incorporated into the dough.  When baked, the cake acquires a moist texture and a subtle touch of rum, creating a delicious combination of flavors.

Ingredients:

• 1 cup of raisins

• 1/2 cup rum (can be dark or golden rum)

• 1 cup of wheat flour

• 1 teaspoon baking powder

• 1/4 teaspoon salt

• 1/2 cup butter (at room temperature)

• 1 cup of sugar

• 3 eggs

• 1 Teaspoon vanilla extract

METHOD

Before preparing the rum and raisin cake, be sure to soak the raisins in rum to enhance their flavor and soften their texture, then follow the recipe carefully for a delicious result.

Preparation:

1. Preheat the oven to 180°C (350°F) and grease a cake pan with butter and flour, or you can use parchment paper to line the bottom.

2. In a small bowl, place the raisins and pour the rum over them.  Let the raisins soak in the rum while you prepare the dough.  This will give them a delicious flavor and soften their texture.

3. In a medium bowl, sift together the flour, baking powder and salt.  Reserve this mixture.

4. In another large bowl, beat the butter and sugar until smooth and creamy.

5. Add the eggs one at a time, beating well after each addition.  Add the vanilla essence and mix again.

6. Gradually fold the sifted flour mixture into the butter and egg mixture.  Mix until all ingredients are well combined and there are no lumps.

7. Drain the raisins soaked in rum and add them to the dough.  Mix gently to distribute the raisins evenly.

8. Pour the batter into the prepared pan and smooth the surface with a spatula.

9. Bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

10. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.  Then, unmold the cake and place it on a rack to cool completely.

Ready!  Now you have a delicious rum and raisin cake to enjoy.  You can decorate it with icing sugar sprinkled on top or even make a rum glaze to give it even more flavor.  Enjoy your creation!
