Salmon with greek avocado salsa

INGREDIENTS

 

2 portions of fresh salmon
1 cup diced roma tomato
1 medium avocado, diced
1/2 cup chopped red onion
1/4 cup sliced kalamata olives
1/2 cup cucumber, chopped
3 tbsp crumbled feta
2 tsp minced garlic, divided
2 tbsp lemon juice, divided
1 tbsp chopped fresh parsley (a handful)
1/2 tbsp oregano
2 tbsp olive oil, divided

DIRECTIONS

 

In a large bowl, combine red onions, cucumber, olives, 1 tsp minced garlic, tomatoes, avocado, feta (mixed in 2 tbsp then added the last tbsp on top once plated up) 1 tbsp lemon juice, 1 tbsp olive oil, parsley, and oregano. Season with salt to taste.


Preheat oven to 400. Place salmon in a baking dish (skin side down) coated with 1 tsp minced garlic, 1 tbsp of lemon juice, 1 tbsp olive oil, salt & pepper.

Bake for 15 min then broil for 5.
Once done, plate with the salsa & top everything with more lemon juice + sea salt.
