Tejocote is a Mexican fruit with multiple contributions in vitamins and nutrients.  But Mexicans use it to prepare a delicious dessert that has become a traditional dish in Mexican cuisine.  That is why we present in detail the recipe to prepare Dulce de tejocote, taking advantage of the acidity and hardness of this fruit, which have made it the favorite recipe for many.

• ½ kg of tejocote.

• 300 grams of brown sugar.

• 1 tablespoon of cinnamon.

• 1 spoon of vanilla.

• 1000 milliliters of water.

Steps

The preparation to make Dulce de Tejocote is very simple, you do not need to be an expert chef or pastry chef.  Below we will describe in detail all the steps you must follow:

Step 1

Place all the tejocotes in a bowl to wash them well and remove any residue they have.  Then, in a saucepan, bring the water to a boil and when it starts to boil, pour in the fruits and let them cook for 5 minutes so that they soften a little.

Step 2

Once the tejocotes are cooked, you should preserve them in a bowl with cold water to stop the cooking.  At this point, they will start to get a little wrinkled and it will be the ideal time to peel them.

Step 3

In a saucepan, place 1000 milliliters of water to boil.  Then, add the essences, sugar and vanilla.  Subsequently, add the previously peeled tejocotes and cook them over low heat for 50 minutes. 

Remember to move them so that the fruits do not burn, especially those at the bottom.  Preserve them for 120 minutes so that the flavors concentrate.  It is important that when serving you add the glaze on top.
