Vegan Green Goddess Buddha Bowl with Avocado Tahini dressing

Cooked brown rice
Boiled edamame beans
Cucumber tagliatelles
Grape tomatoes
Avocado
Red onion
Pumpkin seeds
Sesame seeds

1/2 avocado
3 tbsp smooth tahini
1/2 lemon juice
1 clove raw garlic
Salt & pepper

Blend everything together, adding as much or as little water to reach your desired consistency (I like my dressing pretty thick)

Assemble your bowl and drizzle a generous amount of dressing. Mix everything and enjoy !
