Apple banana cake

Apple banana cake is so quick to make.   The simple batter with banana puree and apple cubes turns out super juicy.  Immediately before serving, the cake is dusted with powdered sugar.


3 ripe brown bananas
150g sugar
125g soft butter
3 eggs (size M)
450 g wheat flour (Type 405)
50 g cornstarch
1 pack of baking powder
1 pinch of cinnamon
3 medium apples
A little fat for the shape
Some flour for the mold
Some powdered sugar for dusting


1st step
Grease a wreath form (Ø 28 cm) and dust it with flour.  Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).  Peel the bananas and mash them with a fork.

2nd step
Cream sugar with butter until creamy.  Crack the eggs and stir them into the butter mixture one at a time.  Stir the banana puree into the dough.  Mix the flour, starch, baking powder and cinnamon and sift into the dough.

3rd step
Wash, peel, quarter and cut the apples into small cubes.  Fold the apple cubes into the batter by hand, then spread the batter into the prepared wreath shape and bake in the preheated oven for about 50 minutes.  After baking, let the cake with apple and banana cool slightly on the wire rack.

4th step
Loosen the mold slightly with a knife and turn the cake out with the banana and apple.  Allow the cake to cool completely and dust with powdered sugar before serving.  The banana and apple cake makes approx. 20 pieces and will keep in an airtight container at room temperature for at least 3 days.
