Bahan A Orange Ogura

Ingredients

 

• 4 egg yolks
• 85 gr Orange Juice( I use Sunkist lemon juice)
• 48 gr Vegetable Oil
• 1/2 teaspoon Salt
• 70 gr low / medium protein flour

Ingredients B Orange Ogura:

• 4 egg whites
•1/4 sdt Cream Of Tartar (can be replaced 1 tbsp lemon juice / lime)
• 90 gr Sugar Sand

*17cmx7cm round pan for batter
*24cm pan for the base of the dough pan, and fill with hot water as high 1 cm
*I wear a brass without a connection, If you use a baking sheet with a connection, line it around the pan and the bottom of the pan with aluminum foil so that the water doesn’t seep into the pan

How to make an Orange Ogura:

 

• Beat the egg yolks with a whisker for a while as long as they are well blended
• Enter the orange juice, stir briefly
• Stir in the oil until well blended
• Enter the salt mix well
• Enter the flour while sifting and stir until well blended with a whisk, and strain to get a smooth cake texture later and set aside for a while

• Mix egg white and cream of tartar until foamy on low speed

• Add sugar gradually mixer with low speed
• After the sugar has been added, increase
the speed of the mixer to medium speed and the mixer until the soft peak stage only (so that the egg white dough remains stable do not use high speed at the time the egg white dough mixer)

• Gradually add the egg white mixture to the egg yolk mixture, stir gently until the dough is evenly mixed(the result of the dough must be thick and smooth)

• Pour into a baking sheet lined with baking paper,stomp the pan several times so that the air trapped in the dough comes out
(For the rim of the pan I spread with a little margarine, I did not grease the bottom of the pan with anything, I only wear baking paper)

 

• Place the batter pan into the pan filled with hot water(fill with hot water as high as 1cm)baked in the au bain marie method or in a water bath

•Panggang disuhu 150 degree of fire up down for 30 minutes or until the dough expands, then lower the temperature 130 top and bottom fire degree and bake until browned or until cooked
(The baking time and temperature used are adjusted to the oven used in each house)
