Chicken and Rice with Pineapple

Ingredients

1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tablespoon soy sauce
1 teaspoon grated ginger
Salt and pepper to taste
1/4 cup green onions, sliced
1 tablespoon sesame seeds

Directions

In a large skillet, heat olive oil over medium heat. Add chicken cubes and cook until golden brown and cooked through. Remove chicken and set aside.

In the same skillet, add onion, garlic, and red bell pepper. Cook until vegetables are soft.
Add pineapple and cook for 2 more minutes.

Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper.  Bring to a boil.
Reduce heat to low, cover and simmer for 18 to 20 minutes, or until rice is cooked through.

Return chicken to pan, mix well and heat through.
Serve garnished with green onions and sesame seeds.
