CHILES IN VINEGAR

Chiles en Vinagre, a popular Mexican dish, features pickled peppers soaked in a tangy vinegar-based solution.  The dish is a harmonious blend of heat from the chilies, the piquancy of vinegar, and a medley of spices.  Typically served as a condiment or appetizer,

Ingredients:

1 kilo of chilies or jalapenos
5 cloves of garlic
Onion
3 bay leaves
Pepper
3 carrots, chopped into slices
a spoonful of sugar
Cloves
a tablespoon of salt
3 marjoram leaves
A cup of white vinegar
2 tablespoons vegetable oil
A cup of water

Preparation:

1. It is necessary to place the vegetable oil in a pot to boil, add the carrots and fry for 10 minutes.  Later, the chiles are poured together with the onion and garlic.

2. Sauté all the previous ingredients and mix for approximately 8 minutes.  The idea is that the texture of the vegetables is crispy and not overcooked.

3. Vinegar, water and spices such as marjoram, bay leaf, sugar and salt are also added.

4. Finally, let all the ingredients cook over low heat for 10 minutes.  Finally, they are allowed to cool and poured into a jar that will be placed in the refrigerator and will serve for months.
