Chinese Fried Rice

Chinese fried rice is an iconic dish of Chinese cuisine that combines cooked rice with ingredients such as meat, vegetables, egg, and seasonings such as soy sauce.  It is stir-fried in a wok at high temperature, creating a distinctive umami flavor and delicious texture.  Popular variations include fried rice with chicken, pork, shrimp or vegetables, making it a versatile and tasty option in Asian cuisine.


• 2 cups of cooked and cooled white rice (ideally from the previous day)

• 150 g chicken, shrimp, pork or tofu (cut into small pieces)

• 1 cup mixed vegetables (carrots, peas, corn, peppers) chopped into small pieces

• 2 beaten eggs

• 3 tablespoons vegetable oil (can be sesame oil for an authentic flavor)

• 2 tablespoons soy sauce

• 1 teaspoon sesame oil

• 2 cloves of garlic, minced

• 1 teaspoon chopped ginger

• Salt and pepper to taste

• Chopped green onions to decorate

Before making Chinese fried rice, make sure you have all the ingredients cut up and ready for quick cooking.  Also, refrigerate pre-cooked rice to prevent it from becoming sticky when stir-frying.

Step 1

Heat a large skillet or wok over medium-high heat.  Add 1 tablespoon oil and cook chicken, shrimp, pork or tofu until cooked.  Remove them from the pan and set aside.

Step 2

In the same pan, add another tablespoon of oil and sauté the mixed vegetables until tender.  Then, remove them and set them aside.

Step 3

Lower the heat to medium and add the last tablespoon of oil.  Add the minced garlic and ginger, and sauté briefly until fragrant.

Step 4

Push the ingredients to one side of the pan and add the beaten eggs to the empty space.  Stir gently until the eggs are cooked but still a little moist.

Step 5

Add the cooked rice to the pan and stir to combine with the ingredients.  Break up any clumps of rice with the spatula.

Step 6

Drizzle the soy sauce and sesame oil over the rice, and continue stirring so that all the ingredients are evenly mixed.

Step 7

Add the reserved cooked ingredients (chicken, shrimp, pork, or tofu) and mixed vegetables to the skillet.  Stir well to heat all the ingredients.

Step 8

Season the fried rice with salt and pepper to taste.  You can adjust the amount of soy sauce according to your preference.

Step 9

Once everything is well mixed and hot, remove the pan from the heat.

Step 10

Serve the Chinese fried rice on plates and garnish with chopped green onions.
